Super quick berry jam

This is simply mashed berries (a raw jam if you like) which can be stirred into yoghurt, cream or coconut cream. They are ideal made with frozen berries or in when in season, berries that are slightly passed their best, as any softness from freezing or being overripe doesn’t show in the jam.

For some reason eating squashed/mashed berries give more flavour than leaving them whole especially when stirred into yoghurt.

Use a mixture of tart (such as redcurrants) or sweet (such as strawberries) to balance out the sweetness or simply use all one type.

 

 

Ingredients - Serves 4

Simply press the berries together with a fork or whizz in a small food processor. Now some choices:

  • Leave the jam just as it is, raw and full of vitamins and fibre and more
  • Use vanilla extract to sweeten the berries
  • If sour, use minimal honey but note it will add carbs
  • If sour, use erythritol sweetener to sweeten them
  • Sieve the jam to get rid of pips if you prefer it smooth.
  • If the jam is very watery, put the berries into the microwave or into a saucepan over the heat and bring to the boil. Allow them to reduce in the heat until thickened. This also gives them a traditional “jammy” flavour as the berries cook.
